مقدمه: گیاه دارویی آویشن ایرانی (Thymus persicus) از جمله گیاهان بومی ایران است که جوشانده و عصاره‌های آن استفاده‌های غذایی و دارویی فراوانی دارند.
هدف: بررسی محتوای متابولیتی عصاره‌های گیاه آویشن ایرانی و تعیین بهترین عصاره از نظر میزان قدرت آنتی‌اکسیدانتی و خواص ضددیابتی و ضدآلزایمری.
روش بررسی: میزان محتوای فنلی، فلاونوئیدی و تاننی نمونه‌ها، به ترتیب با معرف‌های فولین- سیکالتیو، AlCl3 و فولین- دنیس اندازه‌گیری شد و برای تعیین محتوای ساپونینی، روش وانیلین- سولفوریک اسید به کار رفت. بررسی قدرت آنتی‌اکسیدانتی عصاره‌ها با چهار روش مهار رادیکال‌های آزاد DPPH و OH، روش فسفومولیبدنیوم و تعیین قدرت کیلیت‌کنندگی یون فروس انجام شد. برای بررسی قدرت ضددیابتی نمونه‌ها میزان اثر بازدارندگی آنها بر فعالیت دو آنزیم آلفا-آمیلاز و آلفا-گلوکوزیداز و برای بررسی قدرت ضدآلزایمری، از اندازه‌گیری اثر مهاری نمونه‌ها بر روی دو آنزیم استیل و بوتیریل کولین استراز استفاده شد.
نتایج: جوشانده و عصاره هیدروالکلی گیاه آویشن ایرانی دارای ترکیبات فنلی، فلاونوئیدی و تاننی بالاتری نسبت به عصاره‌های دیگر بودند. از نظر محتوای ساپونینی عصاره اتیل‌استاتی دارای بیشترین مقدار بود. بر اساس نتایج تست‌های آنتی‌اکسیدانتی جوشانده و عصاره هیدروالکلی بالاترین پتانسیل را داشتند. در تست‌های ضددیابتی (مهار آنزیم‌های آلفا-آمیلاز و آلفا-گلوکوزیداز) و ضدآلزایمری (مهار آنزیم‌های استیل و بوتیریل کولین‌استراز) نیز جوشانده و عصاره هیدروالکلی قدرت بالایی نشان دادند و به شکل معنی‌داری در مقایسه با دیگر عصاره‌ها اثر مهاری بالاتری داشتند.
نتیجه‌گیری: قدرت بالای جوشانده و عصاره هیدروالکلی گیاه آویشن ایرانی از نظر اثر آنتی‌اکسیدانتی و خواص ضددیابتی و ضدآلزایمری را می‌توان به مقدار بیشتر ترکیبات فنلی، فلاونوئیدی و تاننی در این عصاره‌ها ارتباط داد.
